Overlooking the tranquil gardens of the Mandarin Oriental, Marrakech, Shirvan celebrates the authentic soul of Moroccan cuisine through the refined and heartfelt creations of Chef Hind Nebgane. Originally conceived by Michelin-starred Chef Akrame Benallal, the restaurant continues to evolve under his guidance, paying homage to Morocco’s rich culinary heritage, deeply rooted in tradition, local produce, and a spirit of sharing. A member of the Mandarin Oriental family since the resort opened ten years ago, Chef Hind draws her inspiration from her mother: from her grandmother and mother, she learned the art and generosity of Moroccan cuisine. Born and raised in the historic Kasbah district, she still draws inspiration from the alleyways, the aromas of spices, and the rhythm of the Medina that shaped her. Among her signature creations, the Tangia Marrakchia, an iconic Marrakech dish, and her delicate Pigeon Pastilla reflect her way of sharing the Morocco she knows best. At Shirvan, she shares the Morocco she loves: a Morocco of generosity, seasonality, and stories passed down from generation to generation.
